Instructions
Step 1: Preheat & Prep

Preheat your oven to 350°F (175°C).

Line an 8×8 or 9×9-inch baking dish with parchment paper or lightly grease it.
Step 2: Make the Crust

In a mixing bowl, combine graham cracker crumbs, melted butter, ¼ cup sugar, and 1 teaspoon cinnamon.

Press the mixture evenly into the bottom of the prepared baking dish.

Use the back of a spoon or your hands to compact it firmly.
Step 3: Prepare the Cheesecake Filling

Beat softened cream cheese and 1 cup sugar in a large bowl until smooth and creamy (about 2 minutes).

Add vanilla extract and eggs, one at a time, mixing until fully combined.
Step 4: Assemble the Bars

Pour the cheesecake mixture over the prepared crust and smooth out the top.

In a small bowl, mix ¼ cup sugar with 2 teaspoons cinnamon.

Evenly sprinkle the cinnamon sugar mixture over the cheesecake layer.
Step 5: Bake

Bake for 25–30 minutes, or until the center is set and no longer jiggly.

Remove from oven and allow to cool at room temperature for about 1 hour.
Step 6: Chill

Cover and refrigerate for at least 2 hours (or overnight) to fully set.

Slice into bars and serve chilled for best texture.

For an even stronger churro vibe, brush melted butter on top after baking and sprinkle with extra cinnamon sugar.
