  • 1 cup graham cracker crumbs

  • 4 tablespoons unsalted butter, melted

  • ¼ cup granulated sugar

  • 1 teaspoon ground cinnamon

  • 16 oz (2 packages) cream cheese, softened

  • 1 cup granulated sugar

  • 1 teaspoon pure vanilla extract

  • 2 large eggs

  • ¼ cup granulated sugar

  • 2 teaspoons ground cinnamon


Instructions

Step 1: Preheat & Prep

  • Preheat your oven to 350°F (175°C).

  • Line an 8×8 or 9×9-inch baking dish with parchment paper or lightly grease it.

Step 2: Make the Crust

  • In a mixing bowl, combine graham cracker crumbs, melted butter, ¼ cup sugar, and 1 teaspoon cinnamon.

  • Press the mixture evenly into the bottom of the prepared baking dish.

  • Use the back of a spoon or your hands to compact it firmly.

Step 3: Prepare the Cheesecake Filling

  • Beat softened cream cheese and 1 cup sugar in a large bowl until smooth and creamy (about 2 minutes).

  • Add vanilla extract and eggs, one at a time, mixing until fully combined.

Step 4: Assemble the Bars

  • Pour the cheesecake mixture over the prepared crust and smooth out the top.

  • In a small bowl, mix ¼ cup sugar with 2 teaspoons cinnamon.

  • Evenly sprinkle the cinnamon sugar mixture over the cheesecake layer.

Step 5: Bake

  • Bake for 25–30 minutes, or until the center is set and no longer jiggly.

  • Remove from oven and allow to cool at room temperature for about 1 hour.

Step 6: Chill

  • Cover and refrigerate for at least 2 hours (or overnight) to fully set.

  • Slice into bars and serve chilled for best texture.

Notes

  • For an even stronger churro vibe, brush melted butter on top after baking and sprinkle with extra cinnamon sugar.

  • Let the bars sit at room temperature for 10–15 minutes before serving for the best flavor.
