CLASSIC CHERRY DELIGHT

Crust:

  1. Place the unsalted butter in a medium bowl. Microwave for about 30 seconds or until melted.
  2. Add the graham cracker crumbs and granulated sugar to the melted butter, mixing thoroughly to combine.
  3. Press the crumb mixture firmly into the bottom of an 8 x 8 baking dish that has been sprayed with cooking spray. Set aside.

Filling:

  1. In a large bowl, add the softened cream cheese. Use a mixer to beat the cream cheese until it becomes smooth and free of any lumps.
  2. Incorporate the powdered sugar and vanilla into the cream cheese, mixing well.
  3. Add the Cool Whip to the cream cheese mixture and combine until smooth. Be careful not to overmix.
  4. Spread the filling evenly over the graham cracker crust using a spoon or an offset spatula.
  5. Spoon the cherry pie filling over the top of the filling, then carefully spread it evenly.
  6. Refrigerate for at least 2 hours before serving, preferably overnight for best results.
  7. Store any leftovers in the refrigerator.
