Ingredients

  • Topping:
    • 1/2 cup sweetened flaked coconut, toasted

Instructions

  1. Preparation: Preheat oven to 350°F. Line a 9″x 5″ loaf pan with parchment paper or lightly grease with margarine.
  2. Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Coconut-Sugar Blend: Blend 1/2 cup coconut with 1/4 cup sugar in a food processor. Set aside.
  4. Wet Ingredients: In an electric mixer, blend melted margarine with 3/4 cup sugar. Add eggs one at a time, blending for 10-15 seconds between each.
  5. Combine: Mix in the coconut-sugar blend, coconut extract, and vanilla extract. Gradually add the flour mixture and milk in two batches, mixing until just combined.
  6. Bake: Pour batter into the prepared pan. Bake for 55-65 minutes or until a toothpick comes out clean. Cool in the pan for 30 minutes, then transfer to a wire rack.
  7. Toast Coconut: Reduce oven temperature to 300°F. Spread 1/2 cup coconut on a baking sheet. Bake for 3-4 minutes, then cool.
  8. Glaze: Whisk glaze ingredients together. Let cool to thicken, then pour over the cake.
  9. Finish: Sprinkle toasted coconut on top. Let the glaze set before slicing and serving.
