Coconut Chewies

Ingredients:

  • 1/2 cup butter
  • 2 cups brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups shredded sweetened coconut

Preparation:

  1. Preheat the Oven:

  5. Incorporate Dry Ingredients:
    • In a separate bowl, combine the all-purpose flour, baking powder, and salt.
    • Gradually add the dry ingredient mixture to the wet ingredients.
    • Stir until the ingredients are well combined.
  6. Fold in Coconut:
    • Gently fold the shredded sweetened coconut into the batter until it is evenly distributed.
  7. Transfer to Baking Dish:
    • Transfer the prepared batter to the greased 8×8-inch baking dish, spreading it out evenly.
  8. Bake:
    • Place the baking dish in the preheated oven.
    • Bake for 40-45 minutes, covering the dish with foil for the last 10 minutes of baking.
  9. Cool and Slice:
    • Once done, remove the coconut chewies from the oven and let them cool fully in the baking dish.
    • After cooling, slice the bars into squares or desired shapes.
