Ingredients:
- 1.5 lb ground beef
- 1 packet of Taco Bell seasoning
- 1 large can of refried beans
- 1 large can of red enchilada sauce
- 10 corn flour tortillas (fried individually)
- 1 large tomato, diced
- 1/4 medium onion, diced
- 3+ cups shredded cheese
- Chopped green onion
- Vegetable oil for frying tortillas
Instructions:
- Brown the ground beef in a skillet over medium-high heat. Once browned, drain any excess fat.
- Return the cooked beef to the skillet and add the Taco Bell seasoning packet, following the directions on the packet (usually adding 1/2 to 3/4 cup of water). Simmer until most of the liquid is absorbed. Set aside.
- Heat the refried beans either on the stovetop or in the microwave.
- In a separate skillet, use a small amount of vegetable oil to fry each tortilla individually until they are lightly crispy. Drain them on paper towels.
- Preheat your oven to 350°F (175°C).
- In a casserole dish, layer the bottom with some of the fried tortillas.
- Spread the heated refried beans evenly over the tortilla layer.
- Add the seasoned ground beef on top of the beans.
- Pour half of the can of red enchilada sauce evenly over the beef layer.
- Add another layer of fried tortillas on top.
- Pour the remaining half of the red enchilada sauce evenly over the top layer of tortillas.
- Sprinkle diced tomatoes and yellow onions across the top.
- Spread a generous amount of shredded cheese over the entire casserole. You can choose whether to place tomatoes and onions on the bottom layer of cheese or on top of it.
- Bake in the preheated oven for approximately 20 minutes, or until the cheese is melted and the edges start to bubble.
- Garnish with chopped green onions after cooking.
- Let the casserole stand for 10 minutes before serving.
