Whether you’re cooking for the holidays or a weeknight dinner, this dish is always a crowd-pleaser—no leftovers guaranteed!

Ingredients

Scale
  • 1 can (15.25 oz) whole kernel corn, drained

  • 1 can (14.75 oz) cream-style corn

  • 1 package (8 oz) cream cheese, softened

  • ½ cup unsalted butter, melted

  • 1 cup sour cream

  • 1 box (8.5 oz) Jiffy Corn Muffin Mix

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 cup shredded cheddar cheese

Instructions

1. Preheat and Prep

Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish and set it aside.

2. Mix the Corn Base

In a large bowl, combine the drained whole corn, cream-style corn, and softened cream cheese. Mix until smooth and creamy.

3. Add Butter and Sour Cream

Stir in the melted butter and sour cream until fully combined.

4. Fold in Muffin Mix

Gently fold in the Jiffy Corn Muffin Mix. Season the mixture with salt and pepper.

5. Transfer and Top

Pour the mixture into your prepared baking dish. Spread evenly. Sprinkle shredded cheddar cheese evenly across the top.

6. Bake

Place the dish in the preheated oven and bake for 45 to 55 minutes, or until the edges are bubbly and the top is golden brown.

7. Cool and Serve

Allow the casserole to rest for 5–10 minutes before serving. This helps it firm up and slice cleanly.
