Ingredients

Scale
  • 2 cups cooked rice

  • 2 boneless, skinless chicken breasts, cooked and shredded

  • 1 can (10.5 oz) cream of chicken soup

  • 1 cup sour cream

  • ½ cup cream cheese, softened

  • ½ cup chicken broth

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp black pepper

  • ½ tsp salt

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • ½ cup crushed butter crackers (like Ritz)

  • 2 tbsp melted butter

Instructions

1. Prep the Oven & Dish

  • Preheat your oven to 350°F (175°C).

  • Lightly grease a 9×13-inch baking dish.

2. Layer the Base

  • Spread the cooked rice evenly in the dish.

  • Layer the shredded chicken over the rice.

3. Make the Creamy Sauce

  • In a large bowl, combine:

    • Cream of chicken soup

    • Sour cream

    • Cream cheese

    • Chicken broth

    • Garlic powder, onion powder, salt, and pepper

  • Whisk or stir until the mixture is smooth and creamy.

4. Assemble the Casserole

  • Pour the creamy mixture evenly over the chicken and rice.

  • Sprinkle mozzarella cheese and Parmesan cheese over the top.

5. Add the Topping

  • In a small bowl, mix crushed crackers with melted butter.

  • Sprinkle this mixture over the casserole to form a crispy, golden topping.

6. Bake to Perfection

  • Bake uncovered for 30–35 minutes, or until the top is golden and bubbly.

  • Let it rest for 5 minutes before serving

Notes

  • This is a fantastic recipe for using up leftover chicken or rice.

  • If you’re feeding a crowd, this dish easily doubles.

  • Letting the casserole rest after baking helps the sauce thicken and flavors meld.
