Description

Crockpot Beef Stew is the ultimate comfort food, featuring tender beef, savory vegetables, and a rich broth. It’s perfect for chilly days or busy weeknights, and the crockpot does all the work, making it a fuss-free option for families and gatherings. Enjoy the delicious aroma while it cooks!

Ingredients

Scale
  • 2 lbs beef chuck, cubed (fat trimmed for a leaner stew)
  • 4 carrots, sliced (adds sweetness and color)
  • 4 potatoes, diced (use Yukon Gold or russet for creaminess)
  • 1 onion, chopped (for a savory base)
  • 3 cloves garlic, minced (for aromatic flavor)
  • 4 cups beef broth (low-sodium for better control of saltiness)
  • 1 tbsp Worcestershire sauce (adds depth and umami)
  • 1 tsp dried thyme (for earthy, herby notes)
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (for a hint of spice)
  • 1 bay leaf (adds subtle complexity)
  • 2 tbsp cornstarch (optional, for thickening the stew)

Instructions

  1. Prepare the Ingredients: Trim excess fat from the beef and cut it into 1-inch cubes. Peel and slice the carrots, dice the potatoes, and chop the onion and garlic.
  2. Layer in the Crockpot: Place the beef, carrots, potatoes, onion, and garlic in the crockpot.
  3. Add Liquids and Seasonings: Pour in the beef broth and Worcestershire sauce. Sprinkle with thyme, salt, pepper, and add the bay leaf. Stir gently to combine.
  4. Cook: Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is fork-tender and the vegetables are soft.
  5. Thicken the Stew (Optional): If you prefer a thicker stew, mix 2 tbsp cornstarch with 2 tbsp cold water to create a slurry. Stir it into the stew during the last 30 minutes of cooking.
  6. Serve: Remove the bay leaf and ladle the stew into bowls. Serve hot with crusty bread for dipping.

Notes
