Eggnog Poke Cake

Ingredients:

For the Cake:

  • 1 box white cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup eggnog

For the Filling:

  • 1 (3.4 oz) box instant vanilla pudding
  • 1/2 cup brandy (optional, can use eggnog instead)
  • 1 1/2 cups eggnog
  • 3 cups whipped topping
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg

Preparation:

  1. Preheat oven to 350°F and grease a 9×13-inch baking pan.
  2. Mix cake mix, eggs, oil, and eggnog, then bake for 20-25 minutes.
  3. After cooling, poke holes in the cake.
  4. Whisk together pudding, brandy/eggnog, and pour over the cake.
  5. Chill for at least 15 minutes.
  6. Mix cinnamon and nutmeg into whipped topping, spread on top.
  7. Slice, serve, and enjoy!
