Ingredients

2½ cups all-purpose flour

1 cup unsalted butter, chilled and cubed

¼ cup ice water

6 cups apples, peeled and sliced

1 cup granulated sugar

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1 tablespoon lemon juice

1 tablespoon cornstarch
Instructions
Make the Crust

In a large bowl, whisk together the flour and salt.

Using a pastry cutter or your fingers, cut in the cold, cubed butter until the mixture resembles coarse crumbs.

Gradually stir in ice water just until the dough holds together.

Divide dough in half, flatten into disks, and wrap in plastic wrap. Chill for at least 30 minutes.
 Prepare the Apple Filling

In a large bowl, combine apples, sugar, cinnamon, nutmeg, lemon juice, and cornstarch.

Toss to coat evenly and set aside to allow the flavors to meld.
 Assemble the Bars

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish or line with parchment paper.

Roll out one dough disk on a floured surface to fit the bottom of the pan. Press into the prepared dish.

Spread the apple mixture evenly over the crust.
 Add the Oat Topping

In a small bowl, mix oats, brown sugar, and melted butter until crumbly.

Sprinkle evenly over the apple filling for a sweet and crunchy contrast.
 Add the Top Crust

Roll out the second dough disk and place it over the oat-topped apples.

Cut slits in the top crust to allow steam to escape.

Optionally, brush with a little milk or egg wash for extra shine.
 Bake and Cool
