Ingredients:
- Cheese Slices
- Mayonnaise or Mustard
- Tomatoes
- Onion
- Fried Bologna
Preparation:
Step 1:
- Spray a skillet or heat a small amount of oil over medium-high heat.
- Prepare the bologna. If purchased from a deli, there’s no need to remove the red tip. However, for Bar S or Oscar Meyer, remove and discard the red edge.
- Spread mayonnaise or mustard (or your preferred sauce) on the buns. Chop up any vegetables you wish to add. Since bologna cooks quickly, prepare it before adding it to the skillet.
Step 2:
- After removing the red edge, place the bologna in the heated pan. It will sizzle similarly to other sausages.
- As the center starts to emerge, make two X-shaped slits to prevent twisting while frying. Some prefer to cut the bologna before placing it in the skillet or even notch the outer edge.
Step 3:
- Fry the bologna for approximately three minutes on each side over medium heat. It’s done when lightly charred, giving a caramel taste.
Step 4:
- Once the bologna is ready, remove it from the pan and place it on a paper towel to remove excess grease. Pat the bologna dry if desired.
- Place the fried bologna on your bread, add cheese, and include tomatoes and onions, if preferred.
- Serve your East Texas-style sandwich with your favorite potato chips.
