Ingredients:
- 4 large green tomatoes
- 2 eggs
- 1/2 cup milk
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1/2 cup bread crumbs
- 2 teaspoons coarse kosher salt
- 1/4 teaspoon ground black pepper
- 1 quart vegetable oil for frying
Instructions:
- Slice the tomatoes to about 1/2 inch thick, discarding the ends.
- In a medium-size bowl, whisk together the eggs and milk. Place flour on a plate. On another plate, combine cornmeal, bread crumbs, salt, and pepper.
- Coat the tomato slices by dipping them first in the flour, then in the milk and egg mixture, and finally dredge them in the breadcrumbs to completely coat.
- In a large skillet, pour vegetable oil (enough to have about 1/2 inch depth in the pan) and heat it over medium heat.
- Place the coated tomatoes in the frying pan in batches of 4 or 5, making sure they do not touch each other. Avoid crowding to allow even frying.
- When the tomatoes are browned, flip them to fry on the other side.
- Once done, transfer the fried tomatoes to drain on paper towels.
