GARLIC PARMESAN ROASTED POTATOES

Ingredients:

  • 3 pounds red potatoes, halved
  • 2 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/3 cup grated Parmesan cheese
  • Kosher salt and freshly ground black pepper, to taste
  • 2 teaspoons unsalted butter
  • 2 teaspoons chopped parsley leaves

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C). Prepare a baking sheet by coating it with non-stick spray or greasing the bottom with a thin layer of oil.
  2. In a large bowl, add the halved red potatoes.
  3. To the bowl of potatoes, add olive oil, minced garlic, dried thyme, dried oregano, dried basil, and grated Parmesan cheese.
  4. Season the mixture with salt and freshly ground black pepper according to your taste preferences.
  5. Mix all the ingredients together until the potatoes are evenly coated with the seasoning mixture.
  6. Spread the seasoned potatoes out in an even layer on the prepared baking sheet, placing them peel side up.
  7. Bake in the preheated oven for about 25-30 minutes, or until the potatoes are slightly crispy. Flip them halfway through the baking time to ensure even browning.
  8. While the potatoes are baking, melt the butter either on the stove or in the microwave for about 1 minute.
  9. Once the potatoes are done, remove them from the oven and drizzle the melted butter over the top.
  10. Garnish the roasted potatoes with chopped parsley leaves before serving.
