  • 1 lb ground beef
  • 2 cups sliced peeled potatoes
  • 2 cups finely chopped celery
  • ½ cup finely chopped carrots
  • ¼ cup finely chopped green bell peppers
  • ¼ cup finely chopped onions
  • 2 tbsp butter
  • 1 cup water
  • 2 (10.75 oz) cans condensed cream of mushroom soup
  • 1 (5 oz) can chow mein noodles, divided
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat & Prep – Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.
  2. Brown the Beef – In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat and set aside.
  3. Sauté the Vegetables – In the same skillet, melt butter and sauté the potatoes, celery, carrots, bell peppers, and onions for about 5 minutes.
  4. Simmer – Add 1 cup water, cover, and simmer for 10 minutes until vegetables are tender.
  5. Mix the Filling – In a large bowl, combine the cooked beef, sautéed vegetables, and condensed cream of mushroom soup. Stir until well mixed.
  6. Assemble the Casserole – Spread half of the chow mein noodles in the bottom of the baking dish. Pour the beef mixture on top, spreading it evenly.
  7. Bake Covered – Cover with foil and bake for 20 minutes.
  8. Add Toppings & Bake Again – Remove the foil, sprinkle shredded cheddar cheese and remaining chow mein noodles on top, and bake uncovered for 10-12 more minutes, until bubbly and golden brown.
  9. Serve & Enjoy – Let cool slightly before serving for the best texture and flavor.
