Ingredients:

  • 1 lb. ground beef
  • ½ onion, diced
  • 3 cloves garlic, minced

  • ½ cup red bell pepper, diced
  • 14.5 oz canned diced tomatoes
  • ¾ cup Jasmine rice (or any white rice)
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 ½ cups shredded cheese (your choice of variety)
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. In a large skillet over medium heat, brown the ground beef with the onion and garlic. Cook until the beef is crumbled and no longer pink. Drain and discard any excess fat.
  2. Return the skillet to the heat. Add the diced green and red bell peppers, diced tomatoes, rice, beef broth, tomato paste, Italian seasoning, salt, and pepper. Stir to combine.
  3. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the skillet and let it cook for about 18 minutes, or until the rice is fully cooked.
  4. Once the rice is cooked, gently fluff it with a fork. Sprinkle the shredded cheese over the top of the rice and beef mixture.
  5. Cover the skillet again and allow the cheese to melt over low heat.
  6. Garnish the dish with fresh parsley before serving.
