Ingredients
- 250 grams all-purpose flour
- 300 grams granulated sugar
- 2 large eggs
- 240 grams crushed pineapple, drained
- 50 grams unsweetened coconut flakes
- 120 milliliters vegetable oil
- 2 grams baking soda (1/2 teaspoon)
- 4 grams baking powder (1 teaspoon)
- 5 milliliters vanilla extract (1 teaspoon)
- 1 gram salt (1/4 teaspoon)
Instructions
Preheat your oven to 350°F (175°C). Grease and lightly flour a cake pan to prevent sticking.
2. Mix the Dry Ingredients
In a large bowl, whisk together flour, baking powder, baking soda, and salt until well combined.
3. Combine Wet Ingredients
In another mixing bowl, beat sugar and eggs until fluffy. Stir in vegetable oil, vanilla extract, and drained crushed pineapple until smooth.
4. Incorporate Dry Ingredients
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid overmixing to keep the cake light and fluffy.
5. Fold in Coconut Flakes
Carefully fold in unsweetened coconut flakes to add a rich tropical flavor and extra texture.
6. Pour and Bake
Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool and Serve
Let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
