Description

A hearty, one-pan meal that’s full of flavor and color! Tender, juicy chicken drumsticks are roasted alongside crispy-edged potatoes, sweet carrots, vibrant bell pepper, and broccoli—all tossed in olive oil, garlic, and herbs. It’s a comforting, wholesome dinner with minimal cleanup and maximum taste.

Ingredients

Scale
  • 810 chicken drumsticks or thighs (skin-on, bone-in preferred)

  • 600g potatoes, peeled and diced

  • 1 red bell pepper, chopped

  • 12 carrots, sliced into coins

  • 1 small head of broccoli, cut into florets

  • 3 tablespoons olive oil

  • 2 garlic cloves, minced

  • 2 teaspoons dried herb blend (oregano, thyme, rosemary)

  • Salt and black pepper, to taste

  • Optional: 1 tablespoon fresh lemon juice or zest

Instructions

Step 1: Preheat the Oven

Preheat your oven to 200°C (390°F). Grease or line a large baking dish or sheet pan.

Step 2: Season the Ingredients

In a large bowl, combine the chicken, potatoes, bell pepper, carrots, and broccoli. Add olive oil, minced garlic, dried herbs, salt, and pepper. Toss well to ensure everything is evenly coated.

Step 3: Arrange in Pan

Spread everything in a single layer in your prepared baking dish. Make sure the chicken pieces are skin-side up for optimal browning.

Step 4: Roast to Perfection

Bake for 40–45 minutes, flipping the chicken halfway through for even crisping. The chicken should reach an internal temperature of 165°F (74°C), and the vegetables should be tender and lightly browned.

Step 5: Finish with Lemon (Optional)

Before serving, drizzle a bit of lemon juice or sprinkle with zest for a burst of freshness.
