Ingredients

8–10 chicken drumsticks or thighs (skin-on, bone-in preferred)

600g potatoes, peeled and diced

1 red bell pepper, chopped

1–2 carrots, sliced into coins

1 small head of broccoli, cut into florets

3 tablespoons olive oil

2 garlic cloves, minced

2 teaspoons dried herb blend (oregano, thyme, rosemary)

Instructions
Preheat your oven to 200°C (390°F). Grease or line a large baking dish or sheet pan.
In a large bowl, combine the chicken, potatoes, bell pepper, carrots, and broccoli. Add olive oil, minced garlic, dried herbs, salt, and pepper. Toss well to ensure everything is evenly coated.
Spread everything in a single layer in your prepared baking dish. Make sure the chicken pieces are skin-side up for optimal browning.
Bake for 40–45 minutes, flipping the chicken halfway through for even crisping. The chicken should reach an internal temperature of 165°F (74°C), and the vegetables should be tender and lightly browned.
Before serving, drizzle a bit of lemon juice or sprinkle with zest for a burst of freshness.
