Homemade Fried Mozzarella Sticks

Ingredients:

  • 1 1/2 cups Italian-style dried breadcrumbs
  • 1 1/3 cups freshly grated Parmesan, divided
  • 1 teaspoon salt
  • 2 16-ounce packages mozzarella cheese sticks
  • 4 large eggs, beaten to blend
  • 1 1/2 cups vegetable oil

Instructions:

  1. In a medium bowl, combine breadcrumbs, 1 cup of Parmesan, and salt.
  2. Cut each mozzarella stick in half.
  3. Beat eggs in a shallow bowl, and dip the cheese sticks into the eggs to coat completely. Allow the excess egg to drip back into the bowl.
  4. Coat the cheese sticks in the breadcrumb mixture, patting to adhere and coat completely. Repeat the process by dipping the cheese sticks in the egg and breadcrumb mixture for a second coat.
  5. Place the coated cheese sticks on a baking sheet, cover, and freeze until frozen, about 2 hours.
  6. Heat vegetable oil in a large frying pan over medium heat.
  7. Working in batches, fry the frozen cheese sticks until golden brown, about 1 minute per side.
  8. Transfer the fried cheese sticks to plates.
  9. Sprinkle the remaining Parmesan on top and serve immediately.
