Homemade Peanut Brittle

Ingredients:

  • 2 cups sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 2 cups salted roasted peanuts
  • 2 tablespoons butter
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons vanilla extract

Instructions:

  1. Prepare Your Pan: Line a sheet pan with parchment paper and set aside. This will help in easy removal of the brittle once it’s set.
  2. Prep Your Ingredients: Measure out the peanuts, butter, baking soda, and vanilla extract and have them ready. Timing is crucial in candy making, so having everything measured and within reach will make the process smoother.
  3. Cook the Sugar Mixture: In a medium saucepan, combine the sugar, water, and corn syrup. Stir well to mix. Cook over medium heat, stirring occasionally, until the mixture reaches a gentle boil. Avoid the temptation to increase the heat; patience is key!
  4. Monitor the Temperature: Attach a candy thermometer to the side of the pot, ensuring it’s submerged in the liquid but not touching the bottom. Continue cooking, stirring occasionally, until the thermometer reads 250°F (121°C).
  5. Add the Peanuts: Once the temperature hits 250°F, add the peanuts to the saucepan. Stir constantly until the thermometer reaches 300°F, the hard-crack stage.
  6. Final Steps: Remove the saucepan from heat and immediately stir in the butter, baking soda, and vanilla extract. The mixture will foam up and change texture. Quickly and carefully spread the mixture onto the prepared pan in an even layer using a knife or spoon.
  7. Cooling: Allow the peanut brittle to cool completely, which should take at least 30 minutes. Once set, break it into pieces and enjoy!
  8. Storage: Store any leftover peanut brittle in an airtight container to keep it crisp and delicious.
