- 1 1/2 cups (3 sticks) unsalted butter, softened
- 8 oz cream cheese, softened
- 2 1/2 cups granulated sugar
- 6 large eggs, room temperature
- 1 tsp vanilla extract.
- 1/2 tsp almond extract (optional)
- 3 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup fresh strawberries, finely chopped or pureed
- A few drops red or pink food coloring (optional)
- 1 cup powdered sugar
- 2–3 tbsp strawberry puree or milk
- 1 tbsp cream cheese, softened (optional)
- 1/4 tsp vanilla extract
Instructions
Preheat the oven to 325°F (163°C).
- Grease and flour a Bundt pan (or a loaf pan). Set aside.
- In a large bowl, beat butter and cream cheese until light and fluffy (~2–3 minutes).
- Gradually add sugar and beat until well incorporated and fluffy.
- Beat in eggs one at a time, mixing well after each addition.
- Stir in vanilla and almond extract (if using).
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
- Fold in the chopped or pureed strawberries.
- Add food coloring if using, for a more vibrant cake.
- Pour the batter into the prepared pan.
- Bake for 1 hour 10–15 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- In a bowl, mix powdered sugar, strawberry puree or milk, and cream cheese (if using) until smooth.
- Drizzle the glaze over the cooled cake.

- For a smoother glaze, strain the strawberry puree to remove seeds.
- Let the cake cool completely before glazing to prevent the glaze from melting.
