Homestyle Chicken Noodle Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 rotisserie chicken, shredded
  • 2 medium yellow onions, diced
  • 4 cups chicken broth
  • 1 tablespoon kosher salt
  • 2 bay leaves
  • 1 (8 oz) bag of baby carrots
  • 1 medium rib celery, chopped into 1/4 inch cuts
  • 1 tablespoon minced garlic
  • 1/4 teaspoon dried thyme
  • 1 (8 oz) bag of egg noodles
  • Fresh parsley for garnish

Instructions:

  1. Using a large dutch oven, heat olive oil over medium heat and sauté the onions and garlic until translucent.
  2. Add the shredded chicken to the pot.
  3. Pour in the chicken broth and add the baby carrots, celery, dried thyme, salt, and bay leaves.
  4. Cover the pot and let it simmer until the carrots and celery are tender.
  5. Add the egg noodles to the pot and continue to simmer until the noodles are tender.
  6. Serve the soup hot, garnished with fresh parsley.
