How To Make Lemon Blueberry Bread

Ingredients:

For the Bread:

  • 1/3 cup melted butter
  • 1 cup sugar
  • 3 tablespoons of lemon juice
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons of grated lemon peel
  • 1/2 cup chopped walnuts (optional)
  • 1 cup fresh or frozen blueberries

For the Glaze:

  • 2 tablespoons of lemon juice
  • 1 tablespoon melted butter
  • 1 cup confectioners’ sugar

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, blend the melted butter with 1 cup of sugar, 3 tablespoons of lemon juice, and the eggs.
  3. In a separate bowl, mix together the all-purpose flour, baking powder, and salt.
  4. Stir the dry ingredients into the egg mixture, alternating with the milk.
  5. Add the grated lemon peel, chopped walnuts (if using), and the blueberries. Gently fold them into the batter.
  6. Pour the batter into the greased loaf pan.
  7. Bake in the preheated oven for 61 to 71 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the bread is baking, prepare the glaze. In a small bowl, combine 2 tablespoons of lemon juice, 1 tablespoon of melted butter, and 1 cup of confectioners’ sugar. Mix until smooth.
  9. Once the bread is done baking, remove it from the oven and allow it to cool in the pan for a few minutes.
  10. Drizzle the lemon glaze over the warm bread.
  11. Allow the bread to cool further in the pan for about 10 more minutes, then transfer it to a wire rack to cool completely.
