Description
A low-carb dream! Soft, buttery “cookie dough” bread studded with sugar-free chocolate chips—indulgent and keto-friendly.
Ingredients
-
2 cups almond flour
-
¼ cup coconut flour
-
½ cup granulated keto sweetener (like erythritol or monk fruit blend)
-
1 teaspoon baking powder
-
½ teaspoon salt
-
¼ cup unsalted butter, melted
-
3 large eggs
-
¼ cup unsweetened almond milk
-
1 teaspoon vanilla extract
-
½ cup sugar-free chocolate chips
Instructions
Set your oven to 350°F (175°C). Lightly grease or line a standard loaf pan with parchment paper.
In a large mixing bowl, combine almond flour, coconut flour, keto sweetener, baking powder, and salt. Stir until evenly mixed.
In a separate bowl, whisk together melted butter, eggs, almond milk, and vanilla extract.
Pour the wet ingredients into the dry ingredients. Stir until a thick, cookie dough-like batter forms. Gently fold in the sugar-free chocolate chips.
Transfer the batter to the prepared loaf pan. Smooth the top with a spatula.
Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
Allow the bread to cool completely in the pan before slicing. Serve plain or with a smear of keto-friendly nut butter.
