  • 1 tsp dried rosemary

  • ½ tsp paprika

  • Salt and pepper to taste

  • ½ cup chicken broth

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

Instructions

1. Prep the Oven & Dish

  • Preheat your oven to 375°F (190°C).

  • Lightly grease a 9×13-inch baking dish with olive oil or nonstick spray.

2. Season the Chicken and Potatoes

  • In a large bowl, combine:

    • Lemon juice

    • Lemon zest

    • Garlic

    • Olive oil

    • Thyme

    • Rosemary

    • Paprika

    • Salt & pepper

  • Add the chicken pieces and potatoes. Toss until evenly coated.

3. Assemble the Casserole

  • Spread the chicken and potatoes evenly in the baking dish.

  • Pour in the chicken broth and heavy cream. Gently shake the dish to distribute liquids.

  • Sprinkle Parmesan cheese evenly over the top.

4. Bake

  • Cover the dish with aluminum foil and bake for 30 minutes.

  • Remove foil and continue baking for another 20–25 minutes, or until chicken is fully cooked and potatoes are fork-tender.

5. Rest & Serve

  • Let the casserole sit for 5 minutes before serving.

  • Garnish with chopped fresh parsley for color and added freshness.
