Loaded Baked Potato & Chicken Casserole

Ingredients:

  • 1 kg chicken breast
  • 8 potatoes
  • 1/3 cup olive oil
  • 1 1/2 teaspoons salt
  • 1 tablespoon freshly ground pepper
  • 1 tablespoon Paprika
  • 2 tablespoons Garlic powder
  • 6 tablespoons Hot Sauce
  • {Toppings}
    • 2 cups grated cheese
    • 1 cup crumbled bacon
    • 1 cup diced green onion

Instructions:

  1. Preheat the oven to 500°F.
  2. In a large bowl, combine the olive oil, salt, pepper, paprika, garlic powder, and hot sauce.
  3. Cut the potatoes into cubes and add them to the bowl. Toss until well coated.
  4. Spray a 9×13 baking dish with cooking spray. Transfer the potatoes to the dish, leaving excess sauce in the bowl.
  5. Bake the potatoes for 45 minutes, stirring every 15 minutes for even cooking.
  6. Cut the chicken into cubes and add it to the bowl with the remaining sauce, ensuring it’s well coated.
  7. In a separate small bowl, mix together the cheese, bacon, and green onions.
  8. Once the potatoes are cooked, add the marinated uncooked chicken on top.
  9. Spread the cheese, bacon, and green onion mixture over the chicken.
  10. Bake for an additional 15 minutes or until the chicken is fully cooked.
