Loaded Potato & Meatloaf Casserole – A hearty mashup of juicy meatloaf, creamy mashed potatoes, melted cheddar, and green onions. Comfort food at its best—perfect for weeknights or family dinners!

Ingredients

Scale
  • 1.5 pounds ground beef

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • ½ cup breadcrumbs

  • ¼ cup milk

  • 1 egg

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ cup ketchup

  • 2 pounds potatoes, peeled and sliced

  • ½ cup sour cream

  • ¼ cup milk

  • 2 tablespoons butter

  • 1 cup shredded cheddar cheese

  • ¼ cup chopped green onions

  • Salt and pepper to taste

Instructions

Step 1: Preheat and Prep

  • Preheat your oven to 375°F (190°C).

  • Lightly grease a 9×13-inch casserole dish.

Step 2: Make the Meatloaf Base

  1. In a large bowl, mix together the ground beef, chopped onion, minced garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper.

  2. Press the meat mixture evenly into the bottom of the prepared casserole dish.

  3. Spread the ketchup evenly over the top.

Step 3: Pre-Bake the Meatloaf

  • Bake the meatloaf layer for 25 minutes. While it cooks, prepare the potato layer.

Step 4: Prepare the Mashed Potatoes

  1. Boil the sliced potatoes in a large pot of salted water until fork-tender (about 15 minutes).

  2. Drain and mash the potatoes with sour cream, milk, and butter until smooth and creamy.

  3. Season to taste with salt and pepper.

Step 5: Assemble the Casserole

  1. Carefully spread the mashed potatoes over the partially baked meatloaf.

  2. Top with shredded cheddar cheese and chopped green onions.

Step 6: Final Bake

  • Return the casserole to the oven and bake for an additional 20 minutes, or until the cheese is melted, bubbly, and golden.

Notes

  • Use a potato masher or hand mixer for ultra-smooth mashed potatoes.

  • This dish pairs beautifully with a glass of red wine or iced tea.
