  • ¼ cup brown sugar, packed
  • ¼ cup unsalted butter, melted

For the Cheesecake Filling:

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs, room temperature
  • 1 cup sour cream
  • ¼ cup heavy cream
  • ¼ cup all-purpose flour

For the Caramel Pecan Topping:

  • ½ cup unsalted butter
  • 1 cup brown sugar, packed
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 ½ cups chopped pecans, toasted

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 325°F (163°C).
    • Grease a 9-inch springform pan and line the bottom with parchment paper.
    • In a bowl, mix graham cracker crumbs, chopped pecans, brown sugar, and melted butter. Press the mixture firmly into the pan’s base.
    • Bake for 10 minutes, then let it cool.
  2. Make the Cheesecake Filling:
    • In a large mixing bowl, beat the cream cheese and granulated sugar until smooth.
    • Add vanilla extract and mix well.
    • Incorporate the eggs one at a time, blending thoroughly after each addition.
    • Fold in sour cream, heavy cream, and flour until the mixture is smooth and creamy.
    • Pour the filling over the cooled crust.
  3. Bake the Cheesecake:
    • Bake for 55-65 minutes until the edges are set but the center is slightly wobbly.
    • Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.
    • Refrigerate for at least 4 hours or overnight.
  4. Prepare the Caramel Pecan Topping:
    • In a saucepan, melt butter over medium heat.
    • Stir in brown sugar and heavy cream, simmering for 2-3 minutes.
    • Remove from heat, add vanilla extract, and let it cool slightly.
    • Stir in toasted pecans.
  5. Assemble and Serve:
    • Pour the caramel pecan topping over the chilled cheesecake.
    • Slice and serve. Enjoy!

Notes

  • For a smoother caramel sauce, strain it through a fine-mesh sieve before adding pecans.
  • Always use a springform pan for easy removal and serving.
