Description

Magic Lemon Cobbler
A bright, zesty dessert with a buttery base and tangy lemon filling that magically layers itself as it bakes. Sweet, tart, and effortless—perfect for spring and summer!

Ingredients

Scale
  • 1 cup buttermilk

  • ½ cup (1 stick) unsalted butter

  • 1 tablespoon vanilla extract

  • 1 tablespoon lemon extract

  • 1 cup all-purpose flour

  • 1 ½ teaspoons baking powder

  • ¼ teaspoon salt

  • 1 cup granulated sugar

  • 1 (21 oz) can lemon pie filling

Instructions

Bake Your Magic Lemon Cobbler Like a Pro:

  1. Preheat & Prep
Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish to prevent sticking.

  2. Melt the Butter
In a saucepan, melt the butter over low heat. Let it cool slightly.

  3. Mix Dry Ingredients
In a large bowl, whisk together flour, baking powder, salt, and sugar.

  4. Combine Wet Ingredients
In a separate bowl, mix buttermilk, lemon extract, vanilla extract, and melted butter until smooth.

  5. Form the Batter
Gently stir the wet mixture into the dry ingredients. Avoid overmixing; some lumps are fine.

  6. Assemble the Cobbler
Spread the batter evenly in the baking dish. Spoon the lemon pie filling evenly over the top—do not mix.

  7. Bake
Bake for 45–50 minutes or until the top is golden and the batter is set. A toothpick inserted into the batter should come out clean (excluding filling residue).

  8. Cool & Serve
Let the cobbler cool for a few minutes before serving. Best enjoyed warm, topped with whipped cream or vanilla ice cream.

Notes

  • For a more intense lemon flavor, use both lemon extract and fresh lemon zest.

  • This base recipe works with other pie fillings like cherry, apple, or peach.

  • Allow to cool slightly before serving to help the layers set properly
