Ingredients:
- 1 pound ground beef
- 1 (15 oz) can sweet corn, drained
- 1 cup mild, chunky salsa
- ¼ cup sliced black olives
- 3 ½ cups cooked egg noodles
- 1 (15.25 oz) can kidney beans, drained and rinsed
- ¼ cup taco sauce
- 1 (1.25 oz) package taco seasoning mix
- ½ cup tomato sauce
- Salt and pepper to taste
- Crushed tortilla chips
- Sour cream
- Diced tomatoes
- Sliced green onions
- Shredded cheese (cheddar or Mexican blend)
Directions:
- Preheat the oven to 350 degrees Fahrenheit.
- Brown the ground beef in a skillet over medium-high heat until completely cooked.
- Season the beef with chili powder, cumin, oregano, salt, and pepper. Saute for another minute.
- Stir in the salsa, drained sweet corn, drained and rinsed kidney beans, taco sauce, taco seasoning mix, and tomato sauce. Simmer for 5 minutes.
- Grease a 9×13 inch baking dish and spread crushed tortilla chips over the bottom.
- Layer the cooked egg noodles on top of the tortilla chips.
- Spread the meat mixture over the noodles.
- Spread a layer of sour cream over the meat mixture.
- Top with diced tomatoes and sliced green onions.
- Sprinkle shredded cheese over the top.
- Bake in the preheated oven for 30-40 minutes or until bubbly and cheese is melted.
