Ingredients

Scale

For the Shrimp Cocktail:

  • 1 lb cooked shrimp, peeled and deveined (use fresh or frozen, thawed shrimp)
  • 1 cup tomato juice (or Clamato) (adds a rich, savory base)
  • ¼ cup ketchup (for sweetness and tang)
  • ¼ cup fresh lime juice (adds a bright, citrusy kick)
  • 1 tbsp hot sauce (optional) (adjust to your spice preference)
  • 1 medium tomato, diced (for freshness and texture)
  • ¼ cup red onion, finely chopped (adds a sharp, crunchy bite)
  • ¼ cup cucumber, diced (for a refreshing crunch)
  • 1 jalapeño, seeded and finely chopped (adds a mild heat; adjust to taste)
  • ¼ cup fresh cilantro, chopped (for a burst of herbaceous flavor)
  • 1 avocado, diced (creamy and delicious)
  • Salt and pepper to taste (to season)

For Serving:

  • Tortilla chips or saltine crackers (for dipping and crunch)
  • Lime wedges (for garnish and extra zing)

Instructions

 Prepare the Sauce:

  • In a large bowl, combine the tomato juice, ketchup, lime juice, and hot sauce (if using). Stir until well mixed.

 Add the Shrimp and Veggies:

  • Add the cooked shrimp, diced tomato, red onion, cucumber, jalapeño, and cilantro to the bowl. Stir gently to combine.

 Season and Add Avocado:

  • Season the mixture with salt and pepper to taste.
  • Gently fold in the diced avocado to avoid mashing it.

 Chill:

  • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

 Serve:

  • Serve chilled in individual glasses or bowls, garnished with lime wedges.
  • Accompany with tortilla chips or saltine crackers for dipping

Notes

  • For a fancier presentation, serve the shrimp cocktail in martini glasses or small bowls.
  • If you don’t have fresh jalapeños, use a dash of chili powder or cayenne pepper for heat.
  • Always taste and adjust the seasoning before serving.
