Ingredients:
- 8 fresh corn on the cob
- 2 tablespoons melted butter
- 1/4 cup mayonnaise
- 2 limes
- 1 cup crumbled feta cheese
- 2 teaspoons chili flakes
- 1/4 cup heavy cream
- 1/2 cup crispy onion chips (shallots)
- Salt and pepper, to taste
- Fresh cilantro, chopped, for garnish
Instructions:
- Peel the husks off the corn, leaving the husks at the end of the cob intact, and tie them with a string. Soak the tied husks in water to prevent burning.
- Brush the corn cobs with melted butter and season with salt and pepper. Grill the corn for 3-4 minutes on all four surfaces. You can place foil down on the grill to protect the husks.
- While the corn is cooking, heat the cream in a small saucepan over low heat. Add the crumbled feta cheese and whisk frequently until the cheese is melted and the mixture is smooth.
- Once the corn is cooked, brush each cob with mayonnaise.
- Pour the melted feta cheese cream over the corn.
- Sprinkle chili flakes over the corn for a spicy kick.
- Squeeze the juice of the limes over the corn and zest some lime on top for extra flavor.
- Garnish the corn with crispy onion chips (shallots) for crunch and fresh chopped cilantro for added freshness.
- Serve immediately and enjoy your delicious Mexican Street Corn as a side dish or with pulled pork BBQ!
Note: You can also serve extra lime wedges on the side for those who want an extra citrus kick.
