Ingredients:

  • 200ml (⅞ cup) warm milk
  • 7g (1 ½ tsp) dry yeast
  • 20g (4 ¾ tsp) sugar
  • 6g (1 tsp) salt
  • 20g (1 tbsp) honey
  • 400g (3 cups) all-purpose flour
  • 30g (2 tbsp) soft butter
  • 50g (½ cup) chocolate chips

Instructions:

1. Activate the Yeast:

  • In a bowl, whisk together warm milk, dry yeast, honey, and sugar. Allow it to sit for a few minutes until it becomes frothy, indicating that the yeast is activated.

2. Combine Dry Ingredients:

  • In a separate large bowl, combine all-purpose flour and salt.

3. Mix Wet and Dry Ingredients:

  • Pour the yeast mixture into the flour mixture. Stir until the ingredients are well combined and form a dough.

4. Knead the Dough:

  • Knead the soft butter into the dough until it’s fully incorporated. The dough should be smooth and elastic.

5. Incorporate Chocolate Chips:

  • Gently fold the chocolate chips into the dough until they are evenly distributed.

6. Rest the Dough:

  • Set the dough aside for 30 minutes to allow it to rest.

7. Fold the Dough:

  • After 30 minutes, fold the dough as shown in the video, repeating the folding process two more times with 15-minute intervals between each fold.

8. Let it Rise:

  • Once you’ve completed the folding process, set the dough aside for 1 hour or until it doubles in size.

9. Shape the Dough:

  • After the dough has risen, cut it into 6 equal pieces.
  • Roll each piece of dough into a ball, then roll it into a cigar shape.

10. Arrange in Baking Pan: – Place the shaped dough pieces into a baking pan.

11. Final Rise: – Set the pan aside for another 1 hour or until the dough doubles in size once more.

12. Preheat Oven: – Preheat your oven to 180°C (350°F).

13. Egg Wash: – Brush the top of the dough with an egg wash (a beaten egg mixed with a little water) before baking. This will give it a glossy finish.

14. Bake: – Bake the chocolate chip milk brioche in the preheated oven for 20-22 minutes, or until it’s golden brown and cooked through.
