  • 1½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • ½ cup unsalted butter, melted

  • 24 oz cream cheese (three 8 oz packages), softened

  • 1 cup granulated sugar

  • 3 large eggs

  • 1 tsp vanilla extract

  • ¼ cup sour cream

  • ¼ cup heavy cream

  • 1 cup granulated sugar

  • 6 tbsp unsalted butter, cut into pieces

  • ½ cup heavy cream

  • 1 tsp sea salt (optional, for salted caramel)

  • 1 cup semi-sweet chocolate chips

  • ½ cup heavy cream

  • Gold leaf flakes

  • Caramel candies

  • Chocolate shavings


Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 325°F (163°C).

  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.

  3. Press the mixture into the bottom of a greased 9-inch springform pan.

  4. Bake for 10 minutes, then allow to cool while you prepare the filling.


Step 2: Make the Cheesecake Filling

  1. In a large bowl, beat cream cheese and sugar until smooth.

  2. Add eggs one at a time, mixing well after each addition.

  3. Stir in vanilla extract, sour cream, and heavy cream until smooth.

  4. Pour the cheesecake batter over the cooled crust and smooth the top.


Step 3: Bake the Cheesecake

  1. Place the springform pan on a baking sheet to catch any drips.

  2. Bake for 45–50 minutes, until edges are set and the center is slightly jiggly.

  3. Turn off the oven and let the cheesecake sit inside with the door slightly open for 1 hour.

  4. Remove and allow to cool completely at room temperature.


Step 4: Make the Caramel Layer

  1. In a saucepan over medium heat, melt granulated sugar, stirring constantly until it liquifies and turns amber.

  2. Add butter and stir until fully incorporated.

  3. Slowly pour in heavy cream, being cautious of steam. Stir continuously.

  4. Let the mixture boil for 1 minute, then remove from heat. Stir in sea salt, if using.

  5. Let caramel cool slightly, then pour over the cooled cheesecake and spread evenly.


Step 5: Make the Chocolate Ganache

  1. Heat heavy cream in a saucepan until it just starts to simmer. Remove from heat.

  2. Add chocolate chips to the hot cream and let sit for 2–3 minutes.

  3. Stir until smooth and glossy. Let the ganache cool for 10–15 minutes.

  4. Pour over the caramel layer and smooth the top with a spatula.


Step 6: Chill and Garnish

  1. Refrigerate the cheesecake for at least 4 hours, preferably overnight, to fully set.

  2. Just before serving, decorate with gold leaf, caramel candies, or chocolate shavings as desired.
