Ingredients:
- 4 chicken breasts (boneless, skinless)
- 1 can evaporated milk (12 oz)
- 1 cup flour
- 1 1/2 teaspoons salt
- 1/8 teaspoon pepper
- 1/4 cup butter
- 1 can Cream of Chicken soup
- 1/4 cup water
Instructions:
- Preheat your oven to 350°F (175°C).
- Pour a small amount of evaporated milk into a shallow dish, just enough to dip each piece of chicken in.
- Dip each chicken breast in the milk, then roll it in the flour seasoned with salt and pepper.
- In a 13×9 inch baking pan, melt the butter in the preheated oven.
- Once the butter is melted, place the chicken in the pan and bake for 30 minutes at 350°F.
- While the chicken is baking, mix together the water, Cream of Chicken soup, and the remaining evaporated milk from the can.
- After 30 minutes of baking, turn the chicken over in the pan and pour the soup mixture over the top.
- Return the pan to the oven and bake for an additional 30 minutes, or until the chicken is cooked through and golden brown.
