Ingredients:
- 1 lb. ground beef
- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 1 green bell pepper, diced
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp salt
- 1/4 tsp black pepper
- 3 medium potatoes, peeled and diced
- 1 cup beef broth
- 1/4 cup green olives, sliced
- 2 tbsp capers
- 1/4 cup raisins
- Fresh cilantro, chopped (optional)
Instructions:
- Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.
- Add the diced onion and minced garlic to the skillet and cook until softened, about 3 minutes.
- Stir in the diced tomatoes and green bell pepper, and cook for an additional 5 minutes.
- Add the cumin, oregano, salt, and black pepper to the skillet, stirring to combine.
- Add the diced potatoes and beef broth to the skillet, stirring to combine. Bring the mixture to a simmer.
- Reduce the heat to medium-low and let the mixture simmer, covered, for about 20-25 minutes or until the potatoes are tender and the liquid has reduced.
- Stir in the sliced green olives, capers, and raisins. Simmer for an additional 5-10 minutes to allow the flavors to meld.
- Garnish the Picadillo con Papa with chopped fresh cilantro, if desired.
