Instructions
Line a 12-cup muffin tin with paper liners. In a medium bowl, mix chocolate cookie crumbs with melted butter until the mixture resembles wet sand.
Distribute the crumb mixture evenly among the cups. Press firmly into the bottom using the back of a spoon. Place in the refrigerator to chill while preparing the filling.
In a large mixing bowl, beat cream cheese and powdered sugar until smooth. Add vanilla extract and mix until well combined.
In a separate bowl, whip the heavy cream to stiff peaks using a hand mixer or stand mixer. Carefully fold the whipped cream into the cream cheese mixture until smooth and fluffy.
Spoon the cheesecake filling over the chilled crusts. Smooth the tops with a spoon or spatula. Place the muffin tin back into the fridge for at least 4 hours, or overnight for best results.
Once fully set, drizzle each cheesecake with caramel sauce. Sprinkle chopped pecans on top and drizzle melted chocolate over each one.
