Ingredients
-
1 cup unsalted butter, softened
-
½ cup granulated sugar
-
1 large egg
-
1 tsp vanilla extract
-
2 cups all-purpose flour
-
½ tsp salt
-
1 cup mixed nuts (walnuts, pistachios, almonds), finely chopped
-
¼ cup honey
-
1 tsp cinnamon
-
½ tsp ground cardamom
-
½ cup heavy cream
-
¼ cup cream cheese, softened
-
2 tbsp powdered sugar
-
½ tsp orange blossom water (optional)
Instructions
Prepare the Cookies
-
Preheat oven to 350°F (175°C).
-
In a large bowl, beat butter and sugar until pale and fluffy.
-
Add egg and vanilla, mixing until smooth.
-
Gradually mix in flour and salt until a soft dough forms.
-
Roll dough on a lightly floured surface to about ¼-inch thickness.
-
Cut into circles using a cookie cutter.
-
Place cookies on a parchment-lined baking sheet and bake for 10–12 minutes, or until edges are just golden.
-
Let cookies cool completely on a wire rack.
 Make the Nutty Filling
-
Toast chopped nuts in a dry skillet over medium heat for 2–3 minutes, until fragrant.
-
Remove from heat and mix with honey, cinnamon, and cardamom.
-
Allow mixture to cool slightly before using.
 Prepare the Creamy Layer
-
In a bowl, whip heavy cream until soft peaks form.
-
In a separate bowl, beat cream cheese, powdered sugar, and orange blossom water (if using) until smooth.
-
Gently fold whipped cream into the cream cheese mixture until light and fluffy.
 Assemble the Cookies
-
Spread about 1 teaspoon of the cream layer onto the flat side of one cookie.
-
Add a spoonful of nut filling on top.
-
Top with another cookie, gently pressing to form a sandwich.
-
Repeat with remaining cookies and fillings.
Notes
-
Allow the nut mixture to cool before assembling so it doesn’t melt the cream layer.
-
For a neater finish, pipe the cream layer using a small piping bag or zip-top bag with the corner snipped off.
-
These cookies are best enjoyed slightly chilled for a refreshing finish.
