Instructions
- Season the Chicken: In a small bowl, mix garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this seasoning blend evenly over the chicken thighs or breasts.
- Sear the Chicken: Heat a large skillet over medium heat. Add the chicken and sear for 5-6 minutes per side until golden brown. Remove and set aside.
- Prepare the Sauce: In a separate bowl, whisk together the BBQ sauce and honey until well combined.
- Combine Ingredients: Return the chicken to the skillet. Pour the honey BBQ sauce over the chicken, then add the rice and chicken broth. Stir gently to combine.
- Cook the Rice: Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Add Vegetables: In the last 5 minutes of cooking, scatter the mixed vegetables on top of the rice (do not stir). Cover and let them steam until tender.
- Serve and Garnish: Fluff the rice with a fork, garnish with chopped green onions or parsley if desired, and serve warm.
