Description

A sweet, smoky, and savory dish packed with tender BBQ-glazed chicken, flavorful rice, and vibrant veggies—all made in one pan for easy cleanup!

Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs or breasts (thighs are juicier, but breasts work too!)
  • 1 cup long-grain rice (perfect for absorbing the flavorful sauce)
  • 2 cups chicken broth (adds depth and richness to the rice)
  • ½ cup BBQ sauce (choose your favorite brand or make your own)
  • ¼ cup honey (for a touch of natural sweetness)
  • 1 tsp garlic powder (adds a savory kick)
  • 1 tsp onion powder (enhances the overall flavor profile)
  • ½ tsp smoked paprika (for that irresistible smoky taste)
  • Salt & pepper to taste (season to perfection)
  • 1 cup mixed vegetables (frozen or fresh—great for added nutrition)
  • Chopped green onions or parsley (optional, for a fresh garnish)

Instructions

  1. Season the Chicken: In a small bowl, mix garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this seasoning blend evenly over the chicken thighs or breasts.
  2. Sear the Chicken: Heat a large skillet over medium heat. Add the chicken and sear for 5-6 minutes per side until golden brown. Remove and set aside.
  3. Prepare the Sauce: In a separate bowl, whisk together the BBQ sauce and honey until well combined.
  4. Combine Ingredients: Return the chicken to the skillet. Pour the honey BBQ sauce over the chicken, then add the rice and chicken broth. Stir gently to combine.
  5. Cook the Rice: Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Add Vegetables: In the last 5 minutes of cooking, scatter the mixed vegetables on top of the rice (do not stir). Cover and let them steam until tender.
  7. Serve and Garnish: Fluff the rice with a fork, garnish with chopped green onions or parsley if desired, and serve warm.

Notes

  • This recipe is highly adaptable, so feel free to experiment with different proteins, sauces, and veggies.
  • For a crispier finish, broil the chicken for 2-3 minutes after cooking.
  • Always taste and adjust seasoning before serving to ensure the perfect balance of flavors
