One-Pan Mexican Rice Casserole

Ingredients:

  • 1 pound Ground Beef
  • 1 small Onion, diced
  • Salt & Pepper, to taste
  • 2 tablespoons Taco Seasoning
  • 1 teaspoon Garlic Powder
  • 1 cup Long Grain White Rice
  • 1 1/2 cups Beef Broth
  • 1 15-ounce can Corn, drained
  • 8 ounces Tomato Sauce
  • 1/2 cup Salsa
  • 1 cup Shredded Cheese

Instructions:

Step 1: Cook the Ground Beef and Onion In a large skillet over medium-high heat, cook the ground beef and diced onion with salt and pepper until the beef is no longer pink. Drain excess grease if needed.

Step 2: Season the Beef Return the pan to the stove, sprinkle the beef with garlic powder and taco seasoning, and stir to incorporate the flavors.

Step 3: Add Rice and Other Ingredients Add rice, beef broth, corn, tomato sauce, and salsa to the pan. Bring the mixture to a boil, then cover, reduce heat to low, and simmer for 18-20 minutes until the rice is tender and has absorbed the flavors.
