Description

This One Pot Mexican Rice Casserole is a weeknight winner—hearty, flavorful, and ready in a flash with minimal cleanup. Juicy ground beef, zesty taco seasoning, sweet corn, and tender rice come together in a rich tomato and salsa blend, all topped off with melty cheese. It’s everything you love about taco night in one comforting, cheesy dish.

Ingredients

  • 1 lb ground beef

  • 1 small onion, diced

  • Salt & pepper, to taste

  • 2 tablespoons taco seasoning

  • 1 teaspoon garlic powder

  • 1 cup long-grain white rice (uncooked)

  • 1½ cups beef broth

  • 1 can (15 oz) corn, drained

  • 8 oz tomato sauce

  • ½ cup salsa (your preferred spice level)

  • 1 cup shredded cheese (cheddar, Mexican blend, or your favorite)

Instructions

1. Brown the Beef

In a large skillet or Dutch oven, cook the ground beef and diced onion over medium-high heat. Season with salt and pepper to taste. Cook until beef is no longer pink. Drain any excess fat.

2. Add Seasoning

Stir in the taco seasoning and garlic powder until the meat is evenly coated.

3. Add Remaining Ingredients

Add uncooked rice, beef broth, corn, tomato sauce, and salsa to the skillet. Stir well to combine.

4. Simmer

Bring the mixture to a boil. Then reduce the heat to low, cover with a lid, and simmer for 18–20 minutes, or until the rice is fully cooked and liquid is absorbed.

5. Add the Cheese

Sprinkle the shredded cheese evenly over the top. Cover again for 2–3 minutes or until the cheese is melted and gooey.
