Ingredients

2 cups cooked chicken, shredded or chopped

2 cups uncooked pasta (penne, cavatappi, or rigatoni), cooked and drained

3 tablespoons butter

1 small onion, finely chopped

2 garlic cloves, minced

2 tablespoons all-purpose flour

½ cup sour cream

1 cup milk

3 cups grated cheese (cheddar, Colby jack, Swiss, or a combination), divided

½ teaspoon red pepper flakes

Salt and freshly ground black pepper, to taste
Instructions
Set your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
In a large skillet, melt butter over medium heat. Add chopped onion and garlic; cook 3-4 minutes until softened and fragrant.
Sprinkle flour over the sautéed aromatics and stir to create a roux. Cook for about 1 minute, then gradually whisk in milk and sour cream. Continue whisking until the sauce thickens, about 3-4 minutes.
Reduce heat and stir in 2½ cups of grated cheese until fully melted and smooth.
Add cooked chicken, drained pasta, red pepper flakes, salt, and pepper. Toss gently until everything is evenly coated with the cheese sauce.
Pour the mixture into the prepared baking dish. Sprinkle the remaining ½ cup cheese evenly on top.
Bake uncovered for 20–30 minutes, until the casserole is bubbly and the cheese topping is golden brown.
Remove from oven and let the casserole rest for 5 minutes before serving. Garnish with fresh parsley if desired.
