  • ½ cup powdered sugar (plus more for coating)

  • 1 teaspoon pure vanilla extract

  • 2 cups all-purpose flour

  • 1 cup finely chopped pecans

  • ¼ teaspoon salt


Instructions

1. Preheat and Prep

  • Preheat your oven to 350°F (175°C).

  • Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

2. Cream the Butter and Sugar

  • In a large bowl, beat the softened butter with powdered sugar until the mixture is light and fluffy—about 2 minutes using a hand mixer or stand mixer.

3. Add Vanilla

  • Mix in the vanilla extract until fully incorporated.

4. Incorporate Dry Ingredients

  • Gradually add in the flour and salt, mixing on low speed until combined.

  • Stir in chopped pecans using a spatula or your hands to form a soft, pliable dough.

5. Shape and Bake

  • Roll dough into 1-inch balls and space them 1 inch apart on the baking sheet.

  • Bake for 12–15 minutes, or until the bottoms are lightly golden.

6. Sugar Coating

  • Let cookies cool for 5 minutes.

  • While still warm, roll them gently in powdered sugar.

  • Once fully cooled, roll again for a thicker sugar coating.
