Ingredients:
For the Bread:
- 2 cups flour
- 1 can (20 oz) crushed pineapple (drained, reserving 2 tablespoons juice)
- 1/2 cup sour cream
- 1 cup sugar
- 3 oz cream cheese (softened)
- 1 tsp baking soda
- 1 tsp salt
- 3 tsp vanilla extract
- 1 egg (beaten)
For the Glaze:
- 1⅓ cups powdered sugar
- 2 tablespoons reserved pineapple juice
Instructions:
- Preheat oven to 350°F and grease a 9×5-inch loaf pan.
- Cream together cream cheese and sugar, then mix in egg and vanilla.
- Add sour cream and blend.
- In another bowl, sift together flour, baking soda, and salt. Gradually combine with wet mixture.
- Fold in crushed pineapple, reserving 2 tablespoons.
- Transfer batter to pan, bake for 60 minutes.
- Cool in the pan for 10 minutes, then on a wire rack.
- For the glaze, mix powdered sugar and reserved pineapple juice. Drizzle over cooled bread.
