Ingredients

  • 2 cups white chocolate chips

  • 1/2 cup pumpkin puree (not pie filling)

  • 1 teaspoon pumpkin pie spice

  • 1/2 teaspoon vanilla extract

  • 1/2 cup crushed graham crackers

  • 1/4 cup chopped nuts (optional)

  • 1/4 cup mini chocolate chips (optional)


Instructions

1. Prepare the Baking Sheet

  • Line a rimmed baking sheet with parchment paper or a silicone mat. Set aside.

2. Melt the White Chocolate

  • Place white chocolate chips in a microwave-safe bowl.

  • Microwave in 30-second intervals, stirring between each, until completely smooth and melted.

3. Add Pumpkin and Flavoring

  • Quickly stir in the pumpkin puree, pumpkin spice, and vanilla extract until fully combined.

  • Note: The mixture may thicken slightly—that’s normal.

4. Spread the Mixture

  • Pour the mixture onto the prepared baking sheet and use a spatula to spread it into an even layer, about 1/4 inch thick.

5. Add Toppings

  • Sprinkle crushed graham crackers evenly over the top.

  • Add chopped nuts and mini chocolate chips if using.

6. Chill and Set

  • Refrigerate the bark for at least 1 hour, or until firm.

7. Break and Serve

  • Once set, break into rustic pieces and enjoy!

  • Store in an airtight container in the fridge for up to 1 week.

Notes

  • Be sure to use pure pumpkin puree, not pumpkin pie filling which has added sugar and spices.
