Ingredients:
- 2 tsp olive oil
- 1 tbsp butter
- 3 sweet potatoes, peeled and cut into bite-size cubes
- 1 tbsp brown sugar (adjust to taste)
- Pinch of ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Sea salt, to taste
Instructions:
- Preheat the oven to 350 degrees Fahrenheit (175°C). Coat a small baking dish with cooking spray.
- Peel and dice the sweet potatoes into bite-size cubes, then place them in the prepared baking dish.
- In a microwave-safe bowl, melt the butter, and then pour it over the sweet potatoes. Add the olive oil, brown sugar, ground cinnamon, ground nutmeg, ground ginger, and a pinch of sea salt.
- Toss the sweet potatoes to coat them evenly with the mixture. Adjust the amount of brown sugar or cinnamon to your desired level of sweetness.
- Bake the sweet potatoes in the preheated oven for 60 minutes, stirring them once or twice during roasting to ensure even cooking.
- Once they are tender and have a caramelized exterior, remove the sweet potatoes from the oven.
- Serve the roasted sweet potatoes as a delightful side dish.
