  • 1 tsp Italian seasoning (classic herb blend)
  • Salt and pepper, to taste
  • 12 tbsp olive oil (for sautéing)

Instructions

  • Brown the Sausage:
    • In a large pot, heat 1-2 tablespoons of olive oil over medium heat.
    • Add the Italian sausage, breaking it up with a spoon as it cooks. Cook for about 5-7 minutes, until the sausage is browned and cooked through.
    • If there’s excess fat, carefully drain it, leaving a little behind for flavor.
  • Add the Aromatics:
    • Add the diced onion to the pot, stirring frequently for about 3-4 minutes, or until softened and translucent.
    • Stir in the minced garlic and cook for another minute, just until fragrant (be careful not to burn it).
  • Combine Ingredients:
    • Add the drained and rinsed white beans, chicken broth, diced tomatoes (with their juices), and Italian seasoning to the pot.
    • Stir everything together and bring the soup to a gentle boil over medium-high heat.
  • Simmer:
    • Once boiling, reduce the heat to low and let the soup simmer for 20-30 minutes. This allows the flavors to meld beautifully.
