Instructions
- Brown the Sausage:
- In a large pot, heat 1-2 tablespoons of olive oil over medium heat.
- Add the Italian sausage, breaking it up with a spoon as it cooks. Cook for about 5-7 minutes, until the sausage is browned and cooked through.
- If there’s excess fat, carefully drain it, leaving a little behind for flavor.
- Add the Aromatics:
- Add the diced onion to the pot, stirring frequently for about 3-4 minutes, or until softened and translucent.
- Stir in the minced garlic and cook for another minute, just until fragrant (be careful not to burn it).
- Combine Ingredients:
- Add the drained and rinsed white beans, chicken broth, diced tomatoes (with their juices), and Italian seasoning to the pot.
- Stir everything together and bring the soup to a gentle boil over medium-high heat.
- Simmer:
- Once boiling, reduce the heat to low and let the soup simmer for 20-30 minutes. This allows the flavors to meld beautifully.
- Tip: If you prefer a thicker soup, mash a few of the white beans with the back of a spoon to release their starches.
- Finish with Greens:
- Stir in the kale or spinach and cook for about 3-5 minutes, or until wilted. (Kale may take a bit longer than spinach, so adjust the timing as needed.)
