Perfect for serving over mashed potatoes, rice, or egg noodles, this dish is both hearty and elegant with minimal hands-on time.

Ingredients

Scale
  • 2 lbs beef tips or stew meat, trimmed

  • 1 cup beef broth

  • ½ cup balsamic vinegar

  • 1 tbsp Worcestershire sauce

  • 1 tbsp soy sauce

  • 4 cloves garlic, minced

  • 1 onion, diced

  • 1 tsp dried rosemary (or 1 tbsp fresh)

  • ½ tsp black pepper

  • ½ tsp salt

  • 2 tbsp olive oil

  • 2 tbsp cornstarch

  • 3 tbsp cold water

Instructions

Step 1: Brown the Beef

  • Heat olive oil in a large skillet over medium-high heat.

  • Sear beef tips until browned on all sides. This boosts flavor.

  • Transfer the beef to the slow cooker.

Step 2: Sauté the Aromatics

  • In the same skillet, cook the diced onion until soft (about 3 minutes).

  • Add minced garlic and cook for 1 minute until fragrant.

  • Add this mixture to the slow cooker.

Step 3: Add Liquids and Seasoning

  • Pour beef broth, balsamic vinegar, Worcestershire sauce, and soy sauce into the slow cooker.

  • Stir in the rosemary, salt, and pepper.

Step 4: Slow Cook to Tender Perfection

  • Cover and cook on low for 7–8 hours or high for 3–4 hours.

  • The beef should be fork-tender and full of flavor.

Step 5: Thicken the Sauce

  • In a small bowl, whisk cornstarch with cold water until smooth.

  • Stir into the slow cooker during the last 30 minutes of cooking.

  • Let the sauce thicken and bubble gently.

Step 6: Serve & Enjoy

  • Give everything a final stir, adjust seasoning as needed.

  • Serve hot over your favorite starch or veggie base.

Notes

  • This recipe is perfect for meal prepping, potluck dinners, and even holiday mains.

  • To elevate it even more, drizzle a bit of balsamic reduction on top before serving.
