Ingredients

Scale
  • 1 box red velvet cake mix
  • 1 cup vegetable oil
  • 1 cup sour cream
  • 4 large eggs
  • 1 cup strawberry puree
  • 1 tsp vanilla extract
  • ½ cup brown sugar
  • 1 tbsp ground cinnamon
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • ¼ cup strawberry puree
  • 1 tsp vanilla extract

Instructions

1. Preheat the Oven

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9×13-inch baking pan.

2. Prepare the Cake Batter

  • In a large mixing bowl, combine the red velvet cake mix, vegetable oil, sour cream, eggs, strawberry puree, and vanilla extract.
  • Mix until the batter is smooth and well combined.

3. Prepare the Cinnamon Swirl

  • In a separate bowl, mix together the brown sugar and ground cinnamon.

4. Assemble the Cake

  • Pour half of the cake batter into the prepared baking pan.
  • Sprinkle half of the cinnamon-sugar mixture evenly over the batter.
  • Pour the remaining batter on top and sprinkle the rest of the cinnamon-sugar mixture.
  • Use a knife to gently swirl the batter, creating a marbled effect.

5. Bake the Cake

  • Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool completely in the pan.

6. Prepare the Strawberry Cream Cheese Icing

  • In a mixing bowl, beat the softened cream cheese and butter until smooth and creamy.
  • Gradually add the powdered sugar, mixing until fully incorporated.
  • Stir in the strawberry puree and vanilla extract until the icing is smooth and spreadable.

7. Frost the Cake

  • Once the cake has cooled, spread the strawberry cream cheese icing evenly over the top.
  • Optionally, garnish with fresh strawberry slices or a drizzle of strawberry syrup
