  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

Fresh spinach, sweet strawberries, blueberries, creamy feta & toasted pecans—tossed in a luscious balsamic glaze. Summer on a plate

Ingredients

Scale
  • 1 cup balsamic vinegar

  • ¼ cup honey or brown sugar

  • 10 oz fresh baby spinach

  • 3 cups fresh strawberries, hulled and sliced

  • 1 cup fresh blueberries

  • ⅓ cup crumbled feta cheese

  • 1 cup pecans, toasted (half chopped, half whole for texture)

Instructions

1. Make the Balsamic Glaze

  • In a small saucepan, combine balsamic vinegar and honey over medium heat.

  • Bring to a gentle boil, then reduce to a simmer.

  • Stir frequently and cook for 8–10 minutes, or until the liquid has reduced by half.

  • The glaze should coat the back of a spoon but remain pourable.

  • Pour into a heat-safe bowl and allow to cool and thicken.

2. Assemble the Salad

  • In a large salad bowl, combine baby spinach, sliced strawberries, blueberries, and feta cheese. Toss gently to combine.

  • Divide the salad into individual bowls or plates.

  • Top each portion with a mix of whole and chopped toasted pecans.

  • Drizzle with balsamic glaze just before serving for the perfect finishing touch
