Ingredients
- 1/4 cup of uncooked basmati rice
- 5 cups of water
- 1/2 cup of butter
- 3 pounds sweet onion, coarsely chopped
- 1 cup of half-and-half
- 1 teaspoon of salt
- 2 cups of Swiss cheese, divided
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) and butter a 2-liter baking dish.
- Cook Rice: In a saucepan, bring 5 cups of water to a boil and add the basmati rice. Stir, reduce heat, and let the rice cook until tender, about 5 minutes. Drain the rice and set it aside.
- Cook Onions: In a large skillet, melt the butter over medium heat. Add the chopped sweet onions and cook, stirring, until they become translucent but not browned, about 8 minutes.
- Combine Ingredients: Combine the cooked onions and butter in the skillet with the cooked rice. Stir in the half-and-half, salt, and 1 3/4 cups of Swiss cheese. Mix everything well.
- Transfer to Baking Dish: Transfer the mixture to the prepared baking dish, and sprinkle the remaining 1/4 cup of Swiss cheese over the top.
- Bake: Bake in the preheated oven until the rice is tender and browned, about 1 hour.
- Serve: Remove from the oven and serve hot as a delicious side dish.
